International Denomination: Sodium Stearoyl Lactate
Melting point: 60 degrees C
Used with vegetable emulsifier E in the manufacture
of vegetable ice cream in the Scandinavian countries.
Emulsifier extracted from the lactic acid and the stearic acid (vegetable source)
***Emulsifier must be used in combination with emulsifying wax E: (in the fats phase)
Uses:
Cream,
Lotion,
Milk:
Dosage: 0,5 to 10% in the aqueous phase (water, hydrolats, herb teas)
Attention: Therefore, to make a cream, both emulsifiers are needed:
E: in the fats
F: in water
The result will be lighter than with emulsifying wax,but very professional.
